Moroccan Chicken with Brown Rice


1 tsp paprika
½ tsp cumin
¼ tsp saffron threads
1/8 tsp ground cinnamon
1 clove garlic, minced
4 (4oz) chicken breasts cut into 1-inch pieces
Vegetable cooking spray
2 tsp vegetable oil
1¼ cup chopped onions
1 cup low-sodium chicken broth
¼ cup golden raisins
1 cup brown rice, uncooked
¼ cup chopped fresh cilantro (optional)

Combine first six ingredients in a medium bowl. Add chicken, tossing to coat. Set aside. Coat a nonstick skillet with cooking spray. Place over medium-high heat until hot.  Add onions; sauté 4 minutes. Add chicken mixture, and cook 6 minutes or until chicken is browned, stir frequently. Add broth and raisins; reduce heat to medium, and cook 5 minutes. Cook Rice according to package directions. Add rice to skillet, stirring until heated. Spoon the mixture into individual bowls, and sprinkle with the chopped cilantro.
